The consistency of the batter should not be too runny, keep it slightly thick.
Now pour the prepared batter into a bowl. Add a teaspoon of powdered sugar and salt to taste and toss to combine.
Put lemon juice and baking soda in a bowl. Mix them together and drop into the prepared batter. Now mix the batter well, cover and set aside.
How to Prepare Dhokla Sandwich Chutney
First dry roast the cumin seeds.
Now take a blender and add the roasted cumin, mint leaves, cilantro, four to five garlic cloves and green chillies.
Add some water to it and grind it finely.
Take it out into a bowl, take two scoops of the batter from the prepared batter, and put it in the chutney. Stir well. Keep the chutney consistency a little thick.
Now know the final steps to prepare Dhokla sandwiches
It’s ok if you have a steamer, otherwise you can heat the water in a container according to your dhokla mold.
Take a light dark tray or dhokla mold and spread oil around it.
Now mix the prepared batter again and pour half of the batter into the tray.
Now put it in a pot of boiling water. Put a stand on the bottom so water doesn’t get into the tray.
Then cover the prepared homemade steamer basket with a plate or lid and let it cook for 8 minutes.
Once cooked, remove the lid and pour the prepared chutney over it and spread it evenly around.
Now cover and let it cook for 4 to 5 minutes.
Then remove the lid again and pour any remaining batter on top. After pouring in the batter, sprinkle some coriander leaves on top, then cover and cook for 10 minutes.
Take it out after 10 minutes and let it cool a bit. Then remove the dhokla by turning the tray upside down.
Now cut it into a convenient and desired shape.
On the other hand, heat mustard oil in a pan, add mustard seeds, curry leaves and green chillies, cook for 30 seconds. Then pour the tempering over the dhokla.
Delicious Dhokla sandwiches are ready and served hot.
