Celebrity nutritionist Juhi Kapoor recently posted on Instagram that squeezing a lemon over hot food not only kills all the vitamin C in it, it also affects the taste of the food. Experts believe that vitamin C is extremely sensitive to heat.

Due to the temperature of the food, its nutrients are easily destroyed. Because of this habit we’ve been unknowingly getting into over the years, vitamin C is being destroyed from lemons, and you’re not getting its full benefits.

Doctors say vitamin C or ascorbic acid is very sensitive to temperature and light.

1 Nutrients are destroyed

Juhi said in her Instagram post that lemon juice dissolves easily in hot water and is easy to squeeze. But adding lemon juice to spicy hot food and hot water can destroy vitamin C and its enzymes.

That’s why doctors also say the popular idea of ​​drinking lemon juice with lukewarm water in the morning is also a myth. Many people who drink this drink every day do not get any benefit from lemon juice.

2 Antioxidants become neutral

The lemon in citric acid, which contains beneficial plant compounds like flavonoids, is the best antioxidant. But when mixed with hot food and water, the antioxidants are diluted and neutralized, providing no health benefit.

Avoid adding lemon juice when cooking, and pour in lemon juice only after it has been removed from the flame. This will preserve the quality of the lemon juice.
