To make soy vegetable pancakes you will need
Soya Vadi – 1/2 cup, soaked
Rice – 3/4 cup (150 g), soaked
Curd – 1/2 cup
Green Chili – 2
Ginger – 1 inch, chopped
Chili – 1/2 cup, chopped
Carrots – 1/2 cup grated
Tomato – 1, chopped
Salt – 1 teaspoon
Cumin – 1/2 tsp
Coriander leaves – 1-2 tbsp
Baking soda – less than 1/4 teaspoon
So now let’s make soy vegetable pancakes
First prepare the batter
Soybeans and rice were soaked in water for 2 hours each. The soybeans are then squeezed and placed in a blender jar and coarsely ground. Put them on a plate. Put the soaked rice, tofu, green chilies and ginger in a blender jar. Grind them fine.
In a bowl, take rice cereal, grated soybeans, chopped peppers, grated carrots, chopped tomatoes, 1 teaspoon salt, cumin, and 1-2 tablespoons chopped cilantro. Mix them well, if needed, add 1 tablespoon of water and mix well.
When the batter is well mixed, add less than 1/4 teaspoon of baking soda and mix. This way the pancake batter is ready.
The process of making pancakes
Grease a frying pan with some oil and heat it slightly. Then put 2 spoons of batter in it and spread it out. Now cover and cook on medium-low heat for 2 minutes. After 2 minutes, pour some oil on top and flip it. Then cover and cook from the other side for 2 minutes. Then take it off and make the rest the same way.
Then your hot soy veggie healthy soft pancakes are ready. Serve with mint chutney.
